Mushroom Pasta with Fresh Tomatoes
Fresh Tomatoes and mushrooms make this dish a hearty, healthy meal!

Ingredients
- 3 T olive oil, divided
- 8 oz mushrooms, sliced
- Salt and pepper, to taste
- 1 clove garlic, chopped
- 2 ripe plum tomatoes, cored and diced
- ¾ pound pasta shells or any similar pasta
- 1 T butter
- 4 T fresh chopped basil
- 4 T Parmesan cheese
- Red Pepper Flakes (optional)
Directions
- Heat 2 tablespoons of the olive oil in a nonstick skillet.
- Once the oil is hot, add the mushrooms and sprinkle with salt.
- Cook over medium-high heat, stirring regularly, until lightly browned. Add the garlic and pepper, and cook for about 30 seconds.
- Add the tomatoes and cook for 3 minutes. Set the pan aside and keep warm.
- Meanwhile, cook the pasta in a large pot of boiling salted water according to package instructions. Reserve ¼ cup of the cooking liquid and drain the rest.
- Return the pasta to the pot and add 1 T olive oil, butter, and basil. Stir for 30 seconds, then add the mushroom mixture, parmesan, and reserved cooking liquid.
- Bring to a simmer, toss well and serve immediately.
- Garnish with parsley or red pepper flakes.
